Just out of curiousity, has anyone done this before? If so, what activity did you do and were there any problems in documentation after?

I've done all my activities in a foreign country, and I don't speak a single word of the local language. Though most of these activities were done in my school.
I assume by your question you haven't done yours in/with your school though I think I can still help as there were some of mine that weren't either.

- If you did the activity by yourself then get all your paperwork filled out by your supervisor in their language, then ask a teacher of yours to translate (or Google Translate?) the paper work. It should still be acceptable.

- If you didn't have a supervisor or can't get the paperwork filled out for some reason then try and find a teacher of yours that knows of that activity. If you explain it to your supervisor they might understand.

Either way I would ask your supervisor as soon as possible.
