There is quite a bit of memorization in this topic, but you also need to know how to draw structures for reactions. For example the condensation  reactions of glycerol with 3 fatty acids to form a triglyceride and the reactions of amino acids to form tripeptides, which are fairly complicated.
You also need to recognize structures (such as the sex hormones) but these are given to you in the data booklet.

Solubility of the vitamins comes up quite often as does the structures of polysaccharides (cellulose and starch). 
There are a few calculations involved, energy from food and iodine number. These can be challenging depending on your math ability.
Like I said the rest can be memorized (such as the deficiency diseases, uses and abuses of steroids, etc).
