Base it on what you enjoy, that's what will make it easy! If you pick an "easy" subject but you don't enjoy it, it will be just as hard as the hardest topics. However, I think that the papers which are easier to write are the ones that have many resources out there on. Avoid topics in the sciences which require experimentation on new-ish subjects. I went for psychology because a) I always get 7's in it, and b) I adore the subject. Also make sure that you have a really good supervisor.
