I'm not entirely sure but maybe by timing how long it takes for the sugar from both of these items to be absorbed into the blood-stream. However, that would require some very willing test participants who like getting their fingers pricked. haha. It sounds like a good topic though! Energy gels on the other hand come in a variety of types, so if you're going to compare them, I suggest picking one that is also centered around the use of potassium to replenish electrolytes. The only test I can think of for potassium is the flame test. Basically, metal ions make fire turn a different color. You're supposed to clean a wire, dip it into the solution and put it into the fire. If it turns pink, it should have Potassium ions in it. However this might be affected by the other ingredients of both foods and so I'd check with my supervisor if I were picking that topic.You could really try doing a comparison of different cultivars of banana instead as the preparation would be made more consistent.
