Here's what we did.

We all went to the local KFC and asked the manager for a couple of hours to study their kitchen and facilities.

Everything fits there. The Physics guys worked out the electricity spent/heat etc. The ESS guys calculated the environmental impact and the chem guys worked out the cooking process and oil and all that stuff.

I guess you can do the same for any other restaurant.
