Chem IA- Antioxidants in tea

I  was hoping to do my chem IA on the concentration of antioxidants in tea.  I got it approved by my teacher, and since he told me to look into the Winkler method, I've been doing some research on it but I'm not completely clear on how it works.  I was hoping someone could help me clear up how it works, and how it applies to my IA topic?
